Tomato & Red Pepper Soup

The spouse has gotten more into the vegetarian thing lately.  So I’ve been out searching for recipes that aren’t pasta or veggie chili.

I found a recipe for tomato and red pepper soup that sounded pretty good.  I copied it off and e-mail to myself.  I don’t know why I do that.  I read through the recipe once and then do what I want.  It called for slightly different ingredients and for the soup to be blended.  I like my food to have some texture so I left it chunky.

1 – onion, diced
1 – diced stalk celery
2 – diced red bell peppers
2 – cups diced squash
2 – cloves crushed garlic
1 – 8 oz can tomato sauce
1 – 15 oz can diced tomatoes
3 – cups vegetable broth
3 – leaves basil
1/2 – tsp cayenne pepper
1/2 – garlic pepper
1/2 – tsp salt

Saute the veggies until the onions are translucent, add fluid ingredients and seasoning, cook on medium low around 45 minutes. Quick, delicious and beautiful to look at, too.

  1. It sounds wonderful. I’m going to give it a try, although Ole likes his protein so I may have to put some meat in there somewhere.
